Vegan curry with butternut, chickpeas & spinach in a home made red thai & coconut curry sauce flavoured with fresh coriander

Ingredients:
Butternut, chickpeas, garlic, ginger, onion, lime, lemongrass, coriander, cumin, tomato, chilli, salt, pepper, ev olive oil, soy sauce, sesame oil, coconut cream, fresh coriander, spinach

Heating Instructions:
Defrost overnight in fridge; preheat oven to 180°C; remove plastic lid; bake for 20 minutes till warm through or reheat slowly in a pot on the stovetop

Serving Suggestions:
Garnish with fresh chopped coriander
Serve with sticky rice or naan bread
